I bought some of these at the farmer's market because I remembered coming across a raw recipe for them. Of course I can't find it now and these are just staring at me every time I open the fridge.
Anyone any idea what I can do with them? :help:
That's weird, I just read about making them into a soup in a mag this morning!! This was a cooked soup, but am wondering if it would work in the Vita-mix if you have one, I think I'd add in carrot, ginger and some turmeric with it for a nice warming soup on such a drizzly day today http://www.rawinuk.com/images/icons/icon12.gif

RAW:
Slice sunchokes and enjoy the crunch they add to your salad.
Slice and serve them along with crudites and dips.
Shred them into a slaw. Dice them into a chopped salad.
Slice, dice, or shred and marinate in a little extra virgin olive oil and lemon juice or rice vinegar
Coarsely chop sunchokes and add to the blender when preparing raw soups.

there are loads of artichoke recipes on Goneraw.com i just put artichoke in the search and then loads of posts with the word in came up including some neat ideas to use them in salad, hummus etc
Ive never tried it cooked or raw, would be interested to know your experience of raw and what you did with it ;)
Could be worth searching as Sunchokes too if they're known as that as well ;)
