:icon_cheesygrin: Ha ha cheeezy thread title but I was thinking about Christmas presents and then wondered what raw dishes etc people ate over the festive period cos I haven't been eating raw for a full year yet :o

Please feel free to post your ideas or recipes in this thread to give others inspiration too ;):hert:

Well looks like I'll have to start it off with recipes that I've found while mooching about for spiralisers :rolleyes:

The following have been found on a blog by prettysmartideas;

CRANBERRY RELISH

1-1/2 C fresh cranberries
1 date (or 2, to taste)
1 orange, juiced
1 sm piece fresh ginger, grated (optional)
agave syrup to taste (optional)


• In food processor, grind cranberries, orange juice, and ginger to desired consistency.
• Add agave syrup (if used) to taste, and mix well.


MOCK TURKEY

1 bunch celery
1 green onion
parsley to taste
1 C almonds (or pecans)
1 avocado
sage to taste


• In a food processor, puree celery, green onion, and parsley
• Drain (save juice for soup)
• In a nut/coffee mill, grind nuts fine
• Mash avocado thoroughly with a fork
• Combine all ingredients and mix well.
• Form patties. Place each patty on a leaf of lettuce.

MUSHROOM GRAVY

1/2 C almonds, soaked 12 hours
1/2 C water
2-1/2 C shiitake mushrooms
1 clove garlic (or 1/4 t powdered garlic)
2 t Bragg Liquid Aminos
water, as necessary


• In a food processor, grind almonds fine.
• Add remainder of ingredients, and process to paste, adding water as necessary.

RAW MASHED “POTATOES”

1 head cauliflower, broken into florets
1/4 C cashews
2 cloves garlic, peeled and minced (or to taste)
1/4 C olive oil, or to taste
sea salt to taste
black pepper to taste


• In a food processor, grind cashews fine.
• Add cauliflower, and garlic, and process fine.
• Add olive oil until mixture looks like fluffy mashed potatoes.
• Remove from food processor and sprinkle on black pepper to taste.

DILL STUFFING

1 C sunflower seeds, soaked
2 t dill seed
4 t lemon juice
2 T psyllium husk powder
4 t onion, minced
1/2 t salt


• Combine all ingredients in food processor.


To be honest I think I would rather dehydrate some of those things to make a more warmer meal, just not sure how long for :o

hubby and i are planning a break away at xmas this year and of course i will be doing my raw thing but my dilemma is what to make that is a special dinner for xmas day?

any ideas??

LOL hi sharon, I hope you don't mind but I've merged your thread into this one as I had been wondering the exact same thing :o

But I did stumble across the above recipes ..........however I do appreciate that you may well have missed them on the account of my stoopid thread title :o:o

And hopefully somebody will be along to help us both out even more ;) :D *crosses fingers*

Hi There!
Karen and I are planning on running a series or day courses to demonstrate how to prepare a Raw Xmas. First Karen will do a "Raw Xmas Party", Then we will have a course on Dec 19th where we will demonstrate what to do and how to do it.

It really is not that difficult if you want it to happen.

I have been working on a raw christmas cake. I did a cake making demo of a raw fruit cake with spices at the weekend at the Raw and Wild festival near Forest Row on Saturday and it went down pretty well. I am developing it further to be a Christmas cake and am thinking of offering them to be pre-ordered online from my website to be sent out to customers for Christmas. those little cakes look awesome! although as a former diabetic the carbohydrate value of each one frightens me!!! lol they do look sooo good though yummy!!!!

I can totally understand you feeling like that. As a former gestational diabetic (if that is what you call it) I would limit my intake of these myself, but I figure for me one is OK. For you having so recently recovered from type 1 diabetes I can totally understand you wanting to be very careful.

i made an amazing mincemeat last year
i kept a bit back to see how long it will last
and it is still in my fridge ready for testing :O.
i will check out the recipe
and post in a while
i wrote it down as i was making it
which is unusual for me :)
i made a nut and flax crust to pile it in
like little mince pies
and served with banana icecream made in the matstone juicer
i know this is terrible food combining
but hey it is xmas :)

also mango, banana & lime soup

for dinner
i made a great saukrat (sp)
squish down and plug with rolled outer leaves
put lid on
leave on side 4 > 5 days
then fridge
but..............
i usually eat it most of it within 3 > 4 hours :):):)

will have to check out my note books.
and see what else i have done in the past

burgers are really easy to make in the airing cupboard or dehydrator

now i have a dehydrator i will have warm veg this year
dehydrate about 2hrs
grated courgette, onion, toms & any other softish veg
with miso sauce, mushroom gravy or cashew curry or herb gravy
this took too long in the airing cupboard
but is not an impossible task
and is really delish

i have made a cacao torte type thing for a few xmas'
but that isn't exactly dinner
although i noted one whole one is very filling :O :)

i don't see any reason not to just have lots of puddings
at intervals during the day
as it is treat day and we dont get so many pressies as we start to get younger :)
and i find it very hard not to have a nana smoothie
with all the trimmings in the mornings anyway.

oh and dont forget spicy elixirs infront of the fire before bed

i wasn't sure if you call it raw
but lots of rawies incl DV & DW do these teas etc.
i make enough to have some left for my smoothie in the morning
hence my friend calls me 'elixir smoothie' :)

:bump2: I'm bumping this up again to see if there are any new ideas out there for this Christmas............and yes maybe it is a little late to be thinking of a menu but my goodness the time is rapidly flying by and I can't keep up :rolleyes2::rolleyes2:

I'm quite partial to eggnog but haven't had any in ages so checking recipes about the net for raw versions and posting here ;)

From Raw Glow;
1 batch raw almond milk
5 large soft pitted dates
2 very ripe bananas
1 vanilla bean
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1/4 cup raw macadamia nuts (optional)

Make the almond milk first using a sprout bag. In a blender add all the other ingredients including the vanilla bean seeds. Adjust sweetness to taste by adding more or less dates. The macadamia nuts are optional but they will give the drink a thicker consistency. Enjoy!


Raw food eggnog recipe - Rawtarian



5 ripe bananas
1 cup cold water
1 tablespoon agave nectar
1 tablespoon coconut oil or coconut butter
2 teaspoons vanilla extract

1/2 teaspoon cinnamon
1/8 teaspoon cloves
1/8 teaspoon allspice

1 pinch of sea salt

Blend until smooth. Taste. Add more cinnamon, cloves or allspice to taste. Consume immediately. If refrigerated, the texture will change and become more of a pudding, so consume this raw food eggnog recipe immediately.




From Rawmazing;


1/2 C Almonds
1 Young Coconut (flesh from)
3 Dates
3 T Agave
1 1/2 t Cinnamon
1/2 t Nutmeg
1/2 t Cloves
1 t Rum Extract (not raw but completes the eggnog flavor)
3 C Water

Place all ingredients in blender and blend until very smooth. Strain through nut milk bag. Top with a sprinkle of extra nutmeg. You can serve this warm or cold.

Yessssssssss I said the Christmas word and it's still August.........just! But I like to be as prepared as I possibly can be and Russell James sent this mince pie recipe through so I felt I needed to share it AND in the process collect more ideas and recipes ready for the festive season ;) SO if you have any ideas/recipes that don't already appear in this thread, please do add them :icon_cheesygrin:

Yields 10 – 12 pies
For the crust
2 cups cashews
1 cup oat flour*
1/4 cup agave nectar/maple syrup/honey
2 tablespoon water
3 tablespoons lemon juice
Pinch salt
- Grind all ingredients in a food processor until thoroughly mixed.
- Press the mixture into a tart/muffin tray that has been lined in Clingfilm (plastic wrap) and dehydrate at 105 degrees F for 2-3 hours.
- Remove the crusts from the cases and dehydrate out of the case for a further 8+ hours, on the mesh dehydrator sheet.
*Raw out flour is made by milling raw oats in a coffee grinder or high-speed blender. If you don’t have raw oats available and you don’t mind using oats that have been steamed to preserve shelf life, then non-raw oats will also work.
For the filling
1 1/2 cups soft dates, stones and flowers removed
1/2 cup orange juice
2 apples, chopped small
1 1/2 teaspoons mixed spice
1 cup raisins, roughly chopped
Pinch salt
- Grind all ingredients except the apple and raisins until they form a paste.
- Add in the apple and raisins and process for a further 5 – 10 seconds until fully combined.
- Fill each of the cases with a little of the mixture then top with the cashew icing and a pinch of the nutmeg.
For the cashew Icing
1 1/2 cups cashews
1 tablespoon lemon juice
Pinch salt
3 tablespoons coconut oil
1/4 cup agave
1/2 cup water
- Blend all ingredients in a high-speed blender until completely smooth.
To garnish
Pinch nutmeg
