I have made a number of things using coconut and recently tried Raw Food real world, book recipes. Many dishes had for example
coconut, sweetcorn, flax (ground) mixed spices, blend then form into squares on teflex sheet then dehydrate until pliable....
now without the concout this makes a decent soft bread or tortilla type thing great for filling & eating.
With the coconut and I have now tried (and binned the now expensive results)
Coconut Dried, oil, and fresh both young thai and old whities!!!!
all that happens is the volitile coconut oils dominate the food and its horrible,
I did once eat Kakow kapow chocolate bar once same overpowering flavour, threw that away to!!!

help does anyone else have this problem, or do people actually like that weird strong coconut taste????:mad:

I really like coconut oil but would not use it in such savoury dishes. I agree with you that sweetcorn and flax make great crackers on their own. My favourite use of coconut oil is for raw cakes and chocolates, but I only use small quantities mixed with cacao butter. If I am ever going to cook anything with oil (cook!!!), which I don't do often, I always use coconut oil as it does not become harmful when heated like most other oils.
