This was taken from Kristen Suzanne's (http://www.rawinuk.com/showthread.php?t=43) book, makes 3 cups worth;

1 peeled banana
1 1/2 c of chopped mango
1/2 c of young Thai coconut meat
1/2 c of young Thai coconut water
6 dates soaked for 15 mins
1/2 a vanilla bean chopped (I used a whole one and it was fine)
1/4 tsp allspice
1/8 tsp cinnamon
2 tsp psyllium powder, optional

Blend all ingredients together except psyllium powder, until creamy. Pulse in the psyllium powder and let set for a few mins before serving or if leaving out the psyllium powder, chill for 20-30 mins.

**Just to say that I added a papaya in as well and it made it a nicer colour, then added a strawberry on top ;)

Looks wonderful. I wish I could find young green coconuts round here. I love coconut.

Well as I was writing that out I did wonder what you could sub it with. Obviously the cconut water is easy with the tetrapaks of it, but what about the flesh??

If you are using psylium then I guess that would set it and you could just use extra fruit??
