I've been asked for ideas for those that are stuck when they are on the elimination part of eradicating candida. I found that the advice in books etc, varies and that makes it really really difficult to know what to eat. So the recipes you choose are going to be dependent on whose advice you are following and what they have told you. However, on some occasions you can use a substitution depending on the advice you're following e.g lucuma or mesquite for sugar - Alternative Sweetners (http://www.rawinuk.com/showthread.php?p=296#post296) Make sure you check that you can have fruits, some books say yes to some fruits and others say NO fruit at all!! Generally dried fruits are out due to the moulds that can accumulate on them and the added sweetness in dried fruits.

Generally from what I've read, candida absolutely hates coconut so any recipes with that in have got to be good! Most raw vegan recipes should be okay, but look out for the sweetner in it and find a good substitute for you................may take a bit of jigging with the recipe though.

Alcohol is usually out, but I did read in a couple of books that vodka, gin and dry champagne was okay in moderation.

Coconut Ice - unfortunately I have had this a while but never tried it! Also because I've had it a while I don't have the original source :o Don't forget that goat yoghurt is easier to digest and will still help your good bacteria fight the bad, and apparently candida hates coconut YAY!!



Ingredients:
100gms of creamed coconut (half a block)
2/3 tablespoons boiling water
3 tablespoons of natural goat yoghurt
2 tablespoons of soya milk


Method
First put the coconut block into a bowl and break it up with a fork. Add the boiling water one spoon at a time mixing well with the fork between each spoonfull. Stir in the yoghurt and soya milk and keep mixing until there are no lumps and it is creamy.
Put into an ice cube tray (makes approx 12 cubes) and freeze. I always keep some back to eat the same day. When turned out it is very solid and can be eaten as a lolly. However to eat with a spoon as a desert take it out of the freezer 1/2-1 hour before it is needed.

Lassi is a very refreshing drink from India. A plain lassi is very simply made by whisking plain yoghurt and water in equal volumes. There are however variations and this Mango Lassi is thick sweet and creamy, just how I like it.

A word of warning though it is possible to ask for this to be made without sugar in an Indian restaurant but it was a while before I discovered that they sometimes add mango syrup as well. If you ask for fresh mango only and no sugar then it should be alright. If you are just starting your diet and you are not allowed any fruit then make it plain or try the salt version.


Ingredients for one:
4 heaped tablespoons of thick plain yoghurt (Jax note - goat yog is easier to digest)
5 fluid ounces of filtered cold water
half a mango peeled and cut into pieces.


Place all the ingredients into an electric blender for about half a minute until thick and creamy. Pour into a favourite glass and enjoy the sweet creaminess of it.

Sorry another one without a reference, if anybody recognises the book, let me know and I'll add it, I do remember that it was an old book and had some strange recipes in!!! :D
The carrot juice is tricky if you don't have a juicer, but there are bottles of it sold in some health shops - but check the labels for the ingredients!!!

Sorry again no reference, but taken from a Vegan forum.

Vegan Shortbread
5 oz. (125g) white plain flour
2 oz. (50g) caster sugar OR agave nectar
1 oz. (25g) rice flour OR semolina
4 oz. (100g) vegan margarine


Line a baking tin with greased paper. Sieve the flour. Add the rice flour and sugar. Knead in the margarine. When the mixture binds, pack it into the tin. Make small holes in the top with a fork and crimp the edges with your thumb.


Bake at the bottom of the oven at GM 3 / 325 °F / 170 °C until firm and lightly browned (About 1 hour.) Took 30 mins at top!

Chocolate Nut-Milk Recipe by David Wolfe

1 liter (4 cups) of coconut water

20 cacao beans (preferably peeled)

10 raw cashews (everyone loves cashews!)

3-5 tablespoons of carob powder and/or Organic Maca powder (maca is a powdered root from Peru that is an amazing high-protein superfood aphrodisiac, strengthener, and fertility enhancer. )

3-5 tablespoons of honey and/or agave cactus nectar

2 tablespoons of hempseed oil

2 tablespoons of coconut oil/butter

2-3 pinches of Himalayan Crystal Salt

2-3 sprinkles of cinnamon


Blend all ingredients, drink, and arrive back on Earth in about 2 hours!
