I saw this spot as a place to post recipies, & after reading some of the allergy threads figured a nice no meat recipe that contained no veg, but was nutritious would be a good idea :D

Lemon Lucuma cake xx mine that I sell at the farmers market xx

you lucky lot

Base
2 cups almonds
4 dates
1/2 cup goji berries
1 tblsp Agave
1 tblsp cocount butter
1/2 cup cacao nibs or powder

blend the dry stuff into powder, then add the berries & dates.
Then the agave & coconut, blend until dough

if not doing in a vita prep, once the nuts & fruits are grainy & if you think the machine might be working a bit to hard.
Tip the ingredients into a large mixing bowl and manually squash in the agave & coconut, it's a nice satisfying excersise!!

then press into a oiled (with coconut butter) push out bottomed cake tin, you can go up the sides if wanted.

for the filling

2 lemons juice of only, reserve some zest for decoration
400ml coconut milk, canned if you cant get fresh
but a good tip is to grate a normal brown coconut then blend the pulp, use 2 cups or 400ml of this.
1 dessert spoon vanilla pod (yes the whole pod)
1 cup lucuma
2 tblsp agave
1 cup cashews Raw

blend really well until really smooth
pour (spoon) into base leave in fridge to set
then decorate with zest
